Ingredients for Rangooni Val:

  • Rangooni Val - 1 cup
  • Green chili paste (hari mirch) - 1/2 teaspoon
  • Ginger paste (Adrak) - 1/2 teaspoon
  • Carmon seeds (Ajwain) - 1 teaspoon
  • Tamarind paste (Imli) - 1 teaspoon
  • Jaggery (Gud) - 1 inch piece
  • Turmeric powder (Haldi)- 1/2 teaspoon
  • Red chili powder (Lal mirch) - 1/2 teaspoon
  • Coriander powder (Dhania) - 1/2 teaspoon
  • Cumin powder (Jeera) - 1/2 teaspoon
  • Coriander Leaves (Hara dhaniya) - A few
  • Salt to taste
  • oil - 2 tablespoon

Method for Rangooni Val:

  • Soak the rangooni val overnight, remove the water and wash it and boil it with salt in fresh water, add all the dry masalas to it and mix.
  • Heat oil in pan, add ajwain when they crackle add chili-ginger paste, cook for a minute.
  • Now pour this over the val and bring it to a boil , then add tamarind paste and jaggery.
  • Amount of tamarind and jaggery should be almost equal, so that it has that sweet taste and also the khatta taste, garnish with chopped coriander leaves.
  • Enjoy hot Rangooni Val with rice and curd or puri.
