Vegetarian Recipes - Chutney Recipes

Ingredients for Tomato Garlic Chutney:

  • Tomato (Tamatar) - 1/2 Kg chopped into cubes
  • Garlic (Lehsun) - 10 cloves cut into halves
  • Red chili powder (Lal mirch) - 2 teaspoon
  • Tamarind (Imli) - 1/2 cup
  • Sugar (Chini) - 2 teaspoon
  • Oil - 4 tablespoon
  • Fenugreek Seeds (Methi) - 1/2 teaspoon
  • Mustard Seeds (Sarson)- 1/2 teaspoon
  • Curry leaves -  5
  • Salt to taste

Method for Tomato Garlic Chutney:

  • Soak tamarind in warm water for 2 hours ,mash and extract the juice.
  • Dry roast the fenugreek seeds in a pan on low heat for a couple of minutes and grind .
  • Heat the oil in a heavy bottom pan,add mustard seeds and cover till it finishes spluttering.
  • Add the curry leaves,then the garlic, fry a bit and add tomatoes, tamarind extract and chili powder.
  • Cover and cook on low heat till the tomatoes turn pulpy. Add sugar, salt and further cook, stirring all the while. The whole mass should come together and release all its oil.
  • Take it off the flame,add the fenugreek powder and let it cool.
  • Pour in a clean jar and cork tightly.
  • Store in the refrigerator.
  • Enjoy Tomato Garlic Chutney after 2-3 days.
