Vegetarian Recipes - Chutney Recipes

Ingredients for Spicy Carrot Chutney:

  • Carrot - 1/2 Kg
  • Red chili pepper - 1/2 teaspoon
  • Ginger - 1 inch
  • Garlic - 2 cloves
  • Almonds  - 5 no's
  • Raisins - 2 tablespoon
  • Sugar  -  2 cups
  • Brown cardamoms - 2 no's crushed
  • Vinegar  - 1 cup
  • Water - 1 cup
  • Salt to taste

Method for Spicy Carrot Chutney:

  • Peel and grate the carrots, chop garlic and slice ginger into long strips.
  • Put the grated carrots, water, garlic and ginger in a deep pan and cook on a slow fire until water is absorbed and stir well.
  • Add vinegar, sugar, salt, raisins, almonds and cardamoms and cook till a little thick.
  • Let it cool and pour in a clean jar and cork tightly.
  • Enjoy carrot chutney after 2-3 days.
