  • Mangoes - 1/2 Kg partially riped
  • Vinegar - 1 cup
  • Light brown sugar - 1 cup packed
  • Garlic - 4 cloves
  • Ginger - 1 inch sliced
  • Cayenne pepper - 1 tablespoon


  • In a large pant bring all the ingredients to boil, over medium heat.
  • Reduce the heat to low, simmer for 30 minutes.
  • Stirring constantly to avoid sticking to the bottom of the skillet.
  • Remove from heat and let the chutney cool before serving.
  • Always keep it refrigerated
