Mutton Roganjosh

Ingredients for Mutton Rogan josh:

  • Mutton with bones - 1/2 Kg
  • Water - 3 cup
  • Mustard oil - 6 tablespoon
  • Red chilli powder - 2 teaspoon
  • Curd/yoghurt - 1/2 cup
  • Aniseed powder - 1 teaspoon
  • Cardamom powder - 1 teaspoon
  • Cinnamon powder - 1 teaspoon
  • Asafoetida  - 1/6 teaspoon
  • Cloves - 6 no's
  • Cardamom - 4 no's
  • Bay leaves - 2 no's
  • salt to taste

Method for Mutton Rogan josh:

  • Heat the mustard oil in a pan and fry the mutton pieces till brown. Add the chilli powder and curd and fry again for 10 more minutes.
  • Add water, cover and cook for about 30 minutes, add all the remaining ingredients and simmer for 10 minutes again.
  • Enjoy kashmiri hot mutton roganjosh with rice preparations.
