Ingredients for Shrikhand:
- Fresh curd/yoghurt (Dahi) - 1/2 Kg
- Sugar (Chini) - 1/4 Kg
- Cardamom powder (Ilaichi) - 1/2 teaspoon
- Saffron (Kesar) - A few strands
- Pistachios (Pista) - 1 tablespoon crushed
- Almond (Badam) - 1 tablespoon crushed
Method or Shrikhand:
- Hang curds in a muslin cloth to remove water for 5 hours.
- Add sugar and mix. and keep aside for 30 minutes to allow sugar to dissolve.
- Rub saffron into 1 tablespoon milk till well broken and dissolved and keep aside.
- Beat well till sugar has fully dissolved into curd, pass through a big holed strong strainer, pressing with hand or spatula.
- Mix in cardamom powder and dissolved saffron, almonds and pistas.
- Empty into a glass serving bowl, garnish with crushed almonds and pistas.
- Keep in the refrigerator till time to offer.
- Enjoy cool or chilled Shrikhand.
