Ingredients for Khattai-Aalu:
  • Floury potatoes (Aalu) - 1/2 Kg
  • Tamarind pulp (Imli) - 2 tablespoon
  • Brown sugar (Shakkar) - 1 tablespoon
  • Mustard seeds (Rai) - 1/2 teaspoon
  • Turmeric powder (Haldi) - 1/2 teaspoon
  • Red chili powder (Lal mirch) - 1/2 teaspoon
  • Coriander powder (Dhaniya) - 1 teaspoon
  • Cumin powder (Jeera) - 1/2 teaspoon
  • Green chilies (Hari mirch) - 2 no's sliced
  • Desiccated coconut (Nariyal) - 2 tablespoon
  • Oil - 2 tablespoon
  • Salt to taste
Method for Khattai-Aalu:
  • Peel and dice potatoes.
  • Dissolve the sugar in the liquid.
  • Heat the oil and fry the mustard seeds until they pop.
  • Add the turmeric, chili, coriander and cumin powder and fry .
  • Add the potatoes and toss for about a minute, add salt and little water.
  • Cover tightly and cook on a very low flame for about 15 minutes.
  • Add the tamarind juice, sliced chilies and coconut and stir well.
  • Cover and cook until the potatoes are cooked through.
  • Enjoy hot Khattai-Aalu with rice or chapatis.
