Ingredients for Gujrati Kadhi:
- Curd/Youghurt (Dahi) - 1/4 Kg (one day old curd)
- Water (Pani) - 1/4 litre
- Bengal Gram Flour (besan) - 1/4 cup
- Ginger Paste (Adrak) - 1 teaspoon
- Green chilli paste (Hari mirch) - 1 teaspoon
- Curry leaves (Curry patte) - A few
- Cumin seeds (Jeera) - 1/2 teaspoon
- Mustard seeds (Rai) - 1/2 teaspoon
- Fenugreek seeds (Methi ) - 1/2 teaspoon
- Asafoetida (Hing) - 1/6 teaspoon
- Turmeric powder (Haldi) - 1/4 teaspoon
- Sugar (Chini) - 1 teaspoon
- Coriander leaves (Dhaniya patte) - A few
- Oil - 2 tablespoon
- Salt to taste
Method for Gujrati Kadhi:
- Beat together the yoghurt, besan and water to form a smooth gravy and add ginger and
- chilli paste.
- Heat the oil in pan, add the methi seeds, mustard seeds and cumin seeds and let them
- splutter, add the curry leaves and asafoetida.
- Pour this tempering over the yoghurt -gram flour gravy (kadhi) and bring the kadhi to
- boil, stirring continuously so that it does not boil over.
- Add salt and sugar to taste and boil the kadhi for 20 minutes or untill the kadhi is of the consistency of a thick soup.
- Garnish with coriander leaves and enjoy hot Kadhi with plain rice or roti.
