Khichri Recipe

Ingredients for Saag Khichri:
- Rice - 1/2 cup
- Spinach - 1/4 Kg
- Moong dal, whole - 1/2 cup
- Ginger - 1/2 inch piece
- Ghee - 2 tablespoon
- Asafoetida - 2 Pinch
- Cumin seeds - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspon
- Black Pepper - 1 teaspoon
- Salt to taste
Method for Saag Khichri:
- Wash the moong dal and rice and drain them.
- Wash the spinach well and separate the leaves.
- Put the moong dal in a heavy pot, add water and boil .
- Cover, lower heat, till dal is soft and simmer two minutes.
- Turn off the heat and let the pot sit, covered, for an hour.
- Bring the water to a boil again and add the rice and the ginger .
- Bring to a simmer, cover and cook gently for one hour and stir occasionally .
- Now add the spinach and salt, cover and cook gently for 1/2 hour, stirring constantly. Heat the ghee in pan put in the asafoetida then put cumin seeds and let the seeds splutter.
- Add the ground cumin, coriander, and stir and fry for one minute, pour the into the rice and dal pot, stir, cover and cook for five more minutes.
- Sprinkle with pepper and before serve do not forget to put 1 tablespoon of ghee or butter on the top of Saag Khichri/khichdi.
