Pao Bhaji
Ingredients for Pao Bhaji:
  • Pao or buns - 4 no's halved
  • Potatoes - 1/4 Kg
  • Carrots - 1/4 cup
  • Green beans -  1/4 cup
  • Green peas - 1/4 cup
  • Cauliflower/Cabbage - 1/4 cup
  • Onions - 2 no's chopped
  • Tomato - 3 no's chopped
  • Green chillies - 4 no's
  • Ginger - 1 inch
  • Red chili powder - 1/2 teaspoon
  • Ginger-Garlic paste - 2 teaspoon
  • Oil 3 tablespoon
  • salt to taste
  • Butter - 6 tablespoon
  • Garam masala - 1 teaspoon
  • Coriander leaves - A bunch
  • Lime juice - 2 tablespoon
Method for Pao Bhaji:
  • Wash potatoes, boil , peeled and chop finely.
  • Heat ghee in a pan , add onions and fry till light brown.
  • Add green chilli's, ginger and tomatoes and saute over medium heat till tender.minutes. Reduce heat, then add the red chili powder, mixed vegetables and potatoes.
  • With the help of metal spatula, simultaneously mash and stir for 5 minutes.
  • While stirring, keep sprinkling the ginger garlic paste, diluted in 1/4 cup of water.
  • Add salt and two thirds of butter , now increase the heat and stir well.
  • Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
  • Garnish with chopped onions and green chillies.
  • Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides.
  • Enjoy Pao with the bhaji.
