Ingredients for Pao Bhaji:
- Pao or buns - 4 no's halved
- Potatoes - 1/4 Kg
- Carrots - 1/4 cup
- Green beans - 1/4 cup
- Green peas - 1/4 cup
- Cauliflower/Cabbage - 1/4 cup
- Onions - 2 no's chopped
- Tomato - 3 no's chopped
- Green chillies - 4 no's
- Ginger - 1 inch
- Red chili powder - 1/2 teaspoon
- Ginger-Garlic paste - 2 teaspoon
- Oil 3 tablespoon
- salt to taste
- Butter - 6 tablespoon
- Garam masala - 1 teaspoon
- Coriander leaves - A bunch
- Lime juice - 2 tablespoon
Method for Pao Bhaji:
- Wash potatoes, boil , peeled and chop finely.
- Heat ghee in a pan , add onions and fry till light brown.
- Add green chilli's, ginger and tomatoes and saute over medium heat till tender.minutes. Reduce heat, then add the red chili powder, mixed vegetables and potatoes.
- With the help of metal spatula, simultaneously mash and stir for 5 minutes.
- While stirring, keep sprinkling the ginger garlic paste, diluted in 1/4 cup of water.
- Add salt and two thirds of butter , now increase the heat and stir well.
- Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
- Garnish with chopped onions and green chillies.
- Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides.
- Enjoy Pao with the bhaji.
