Khasta Kachori
Ingredients for Khasta Kachori:
  • Urad dal , skinless  - 1/2 cup skinless
  • Wheat flour - 1 cup
  • White flour - 1 cup
  • Green chili  - 2 no's chopped
  • Anise seeds - 1 tablespoon
  • Coriander seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Asafoetida powder - 1/6 teaspoon
  • Oil for deep frying
  • Salt to taste
Method for Khasta Kachori:
  • Soak urad dal in water for 4 hours or more then rinse and drain.
  • Grind the drained urad dal with the red chili powder, salt and spices to make stuffing.
  • Mix them well and divide it into 12 equal portions.
  • Sift the flour and and salt together and knead with water to make a soft dough.
  • Cover the dough with damp cloth and leave for at least 30 minutes.
  • Divide the dough into 12, using wet hands, and smear each portion with a little oil.
  • Flatten and roll out into 2-inch round and fill one portion of stuffing in each round and close the ends so that suffing should not come out.
  • Roll into a smooth ball, using greased hands or roller pin can also be used but very softly.
  • Heat oil in a deep frying pan or a kadhai and lift the rolled kachori and carefully slip it into the hot oil.
  • Immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball.
  • This should take only a few seconds,now flip the kachori over and cook the other side until golden brown.
  • Enjoy hot Khasta Kachori with chutney.
