Ingredients for Bhature:
- All purpose flour - 1/2 Kg
- Yeast - 1 teaspoon
- Curd/Yogurt - 1 cup
- Oil - For frying
- Salt to taste
Ingredients for Chole:
- Chick peas (chole) - 1/4 Kg
- Ginger paste - 1/2 teaspoon
- Garlic paste - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Oil - 2 tablespoon
- Coriander leaves - A bunch
- Turmeric Powder - 1/2 teaspoon
- Red chilly Powder - 1/2 teaspoon
- Bay Leaves - 2 no's
- Cloves - 4 no's
- Cinnamon - 1 stick
- Garam Masala - 1 teaspoon
- Onion - 1 no's chopped
- Tomato - 1 no's
- Salt to taste
Method for Bhature:
- Take yeast and soak in lukewarm water for 10 minutes
- Take all other ingredients and mix well and add the yeast mixture as well.
- Knead into a soft dough like for chappatis and keep aside for 4 hours in warm area.
- Roll and fry like poories till both sides are golden brown.
Method for Chole:
- Soak the chick peas overnight and pressure cook till tender.
- Heat oil in pressure cooker , add garlic paste and make it dark brown.
- Then add cumin seeds fry till they start spluttering.
- Now add bay leaves, cloves and then add chopped onions.
- Fry till they are light brown and then add tomato till oil starts separating.
- Now add the rest of ingredients including water except the coriander leaves.
- Close the pressure cooker and wait for 3 whistles to come.
- Garnish chole with thinly sliced long pieces of onion and coriander leaves .
- Enjoy hot choley with fluffy bhatura.
