Ingredients for Mutton Rogan josh:
- Mutton with bones - 1/2 Kg
- Water - 3 cup
- Mustard oil - 6 tablespoon
- Red chilli powder - 2 teaspoon
- Curd/yoghurt - 1/2 cup
- Aniseed powder - 1 teaspoon
- Cardamom powder - 1 teaspoon
- Cinnamon powder - 1 teaspoon
- Asafoetida - 1/6 teaspoon
- Cloves - 6 no's
- Cardamom - 4 no's
- Bay leaves - 2 no's
- salt to taste
Method for Mutton Rogan josh:
- Heat the mustard oil in a pan and fry the mutton pieces till brown. Add the chilli powder and curd and fry again for 10 more minutes.
- Add water, cover and cook for about 30 minutes, add all the remaining ingredients and simmer for 10 minutes again.
- Enjoy kashmiri hot mutton roganjosh with rice preparations.
