Petha Burfi
Ingredients for Petha Burfi:
  • White pumpkin - 1 kg
  • Sugar - 1/2 Kg
  • Calcium hydroxide - 2 teaspoon
  • Alum powder - 1/2 teaspoon
  • Rose water - A few drops
  • Kewra essence - A few drops
  • Water  - 2 cup
Method for Petha Burfi:
  • Dissolve alum in 1/2 cup of water and keep a side.
  • Dissolve calcium hydroxide in 1 liter water  and strain with a clean cloth twice.
  • Peel pumpkin, discard seeds, mushy center and cut into rectangular shapes.
  • Prick all over with a fork  and put pieces in cal. hydroxide water, soak for 30 minutes.
  • Drain and wash under clean running water for 2-3 minutes, then put in a bowl, sprinkle alum water, shake to coat all pieces evenly.
  • Drain and boil pieces in a large heavy pan, till a little soft and exuding water.
  • Make a sugar syrup of by boiling sugar and water, till 2 1/2 thread consistency
  • Put drained pumpkin pieces in syrup and boil till syrup becomes thick again.
  • Keep covered with a mesh,overnight.
  • Drain and boil syrup again till thick, add pieces, reboil for 5 minutes.
  • Drain out excess syrup, sprinkle essence and rose water .
  • Cool Petha Burfi completely and refrigerate.
