Ingredients for Petha Burfi:
- White pumpkin - 1 kg
- Sugar - 1/2 Kg
- Calcium hydroxide - 2 teaspoon
- Alum powder - 1/2 teaspoon
- Rose water - A few drops
- Kewra essence - A few drops
- Water - 2 cup
Method for Petha Burfi:
- Dissolve alum in 1/2 cup of water and keep a side.
- Dissolve calcium hydroxide in 1 liter water and strain with a clean cloth twice.
- Peel pumpkin, discard seeds, mushy center and cut into rectangular shapes.
- Prick all over with a fork and put pieces in cal. hydroxide water, soak for 30 minutes.
- Drain and wash under clean running water for 2-3 minutes, then put in a bowl, sprinkle alum water, shake to coat all pieces evenly.
- Drain and boil pieces in a large heavy pan, till a little soft and exuding water.
- Make a sugar syrup of by boiling sugar and water, till 2 1/2 thread consistency
- Put drained pumpkin pieces in syrup and boil till syrup becomes thick again.
- Keep covered with a mesh,overnight.
- Drain and boil syrup again till thick, add pieces, reboil for 5 minutes.
- Drain out excess syrup, sprinkle essence and rose water .
- Cool Petha Burfi completely and refrigerate.
