Ingredients for Aloo Matar Tomato Curry:
- Potatoes - 1/4 Kg"
- Fresh peas - 1 Cup
- Tomatoes - 1/4 Kg
- Oil - 2 tablespoon
- Cumin seed - 1/2 teaspoon
- Ginger Paste - 1/2 teaspoon
- Garlic Paste - 1/2 teaspoon
- Cloves - 2
- Dried red Chilli - 2
- Turmeric powder - 1/2 teaspoon
- Salt to taste
- Coriander leaves - 1/2 Cup
Method for Aloo Matar Tomato Curry:
- Cut potatoes in cubes and tomatoes chopped.
- Heat the oil in a non-stick Pan over medium heat.
- Add the ginger, garlic, cumin seeds and red Chillies.
- Cook until the garlic and ginger are fragrant , for few seconds.
- Add the potatoes and turmeric.
- Stir fry until the potatoes are lightly browned.
- Add 1 cup of water and bring the mixture to a boil.
- Cover and simmer over low heat until the potatoes are almost cooked.
- Add the peas and tomatoes and continue cooking until heated through, stirring very gently.
- Add salt and pepper to taste.
- Garnish with coriander leaves.
- Enjoy Aloo Matar Tomato Curry with Poories or Paranthas or white rice.
