Ingredients for Vegetable Kurma :
- Potato - 3 no's
- Peas - 1/4 cup
- Carrot - 1/4 cup
- Beans - 1/4 cup
- Cauliflower - 1/4 cup
- Onions - 1 no
- Tomato -1 no
- Mint leaves - 4 no's,
- Coriander leaves - Small Bunch
- Cashew nuts - 4 no's
- Clove - 2 no's cardamom
- Cinnamon - 2 no's
- Green chillies - 2 no's
- Ginger & garlic paste - 1 teaspoon
- Coconut -1 cup
Method for Vegetable Kurma :
- Make paste by grinding coconut, cashew nuts, the spices, mint leaves, coriander leaves and green chillies, ginger & garlic and little water to the paste.
- Cook the potatoes separately.
- Heat oil in a pan add the chopped onions fry till they turn golden brown, and then add the tomatoes ,cook till the oil starts separating, then add the vegetables.
- Fry the vegetables well and then add the ground paste ,bring the paste to a boil. Now add the separately cooked potatoes with salt .
- Let the korma boil for about 10 minutes on low level of heat.
- Enjoy Vegetable Kurma with Roties/Chapaties.
