Vegetable Kurma
Ingredients for Vegetable Kurma :

  • Potato  - 3 no's
  • Peas - 1/4 cup
  • Carrot - 1/4 cup
  • Beans - 1/4 cup
  • Cauliflower - 1/4 cup
  • Onions - 1 no
  • Tomato -1 no
  • Mint leaves - 4 no's,
  • Coriander leaves - Small Bunch
  • Cashew nuts - 4 no's
  • Clove - 2 no's cardamom
  • Cinnamon - 2 no's
  • Green chillies - 2 no's
  • Ginger & garlic paste - 1 teaspoon
  • Coconut -1 cup

Method for Vegetable Kurma :

  • Make paste by grinding coconut, cashew nuts, the spices, mint leaves, coriander leaves and green chillies, ginger & garlic and little water to the paste.
  • Cook the potatoes separately.
  • Heat oil in a pan add the chopped onions fry till they turn golden brown, and then add the tomatoes ,cook till the oil starts separating, then add the vegetables.
  • Fry the vegetables well and then add the ground paste ,bring the paste to a boil. Now add the separately cooked potatoes with salt .
  • Let the korma boil for about 10 minutes on low level of heat.
  • Enjoy Vegetable Kurma with Roties/Chapaties.
