Ingredients for Mixed Vegetable Curry :

Carrots - 1/2 cup (finely chopped)
- Potatoes - 1/2 cup (finely chopped)
- French beans - 1/2 cup (finely chopped)
- Canned corn - 1/2 cup
- Fresh Peas - 1/2 cup
- Onions - 1 cup (finely chopped)
- Tomatoes - 3 no's
- Cloves - 4 no's
- Cinnamon - 1 stick
- Bay leaves - 2 no's
- Ginger-garlic paste - 1 teaspoon
- Red chilli powder - 1 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Garam Masala - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Oil - 4 tablespoon
- Coriander leaves - A bunch
- Salt to taste
Method for Mixed Vegetable Curry:

Boil all the vegetables and set aside.

Make a paste of the tomatoes and 1/2 cup of onions in the blender.

Heat oil in a pan , fry mustard seeds ,cumin seeds and let them splatter.

Add all the spices and 1/2 cup chopped onions , fry the onions till light brown.

Add tomato-onion paste and saute until oil separates.

Add turmeric powder, chilli powder, garam masala and salt.

Add the vegetables and simm cook for 10 minutes.

Garnish with coriander leaves .

Enjoy Mixed Vegetable Curry with rice/chapatis.
