Mixed Vegetable Curry
Ingredients for Mixed Vegetable Curry :
  • Carrots - 1/2 cup (finely chopped)
  • Potatoes - 1/2 cup  (finely chopped)
  • French beans - 1/2 cup  (finely chopped)
  • Canned corn - 1/2 cup
  • Fresh Peas  - 1/2 cup
  • Onions -     1 cup  (finely chopped)
  • Tomatoes  - 3 no's
  • Cloves - 4 no's
  • Cinnamon - 1 stick
  • Bay leaves  - 2 no's
  • Ginger-garlic paste - 1 teaspoon
  • Red chilli powder  - 1 teaspoon
  • Turmeric Powder  - 1/2 teaspoon
  • Garam Masala - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Oil - 4 tablespoon
  • Coriander leaves - A bunch
  • Salt to taste

Method for Mixed Vegetable Curry:

  • Boil all the vegetables and set aside.
  • Make a paste of the tomatoes and 1/2 cup of onions in the blender.
  • Heat oil in a pan , fry mustard seeds ,cumin seeds and let them splatter.
  • Add all the spices and 1/2 cup chopped onions , fry the onions till light brown.
  • Add tomato-onion paste and saute until oil separates.
  • Add turmeric powder, chilli powder, garam masala and salt.
  • Add the vegetables and simm cook  for 10 minutes.
  • Garnish with coriander leaves .
  • Enjoy Mixed Vegetable Curry with rice/chapatis.
