Ingredients for Aloo Methi:
- Methi leaves (fenugreek) - 1/2 Kg
- potatoes - 1/2 Kg
- cumin seeds - 1 teaspoon
- coriander powder - 1 teaspoon
- Ginger finely chopped
- Garlic finely chopped
- Green chillies finely chopped
- Asafoetida powders - A pinch
- Turmeric powder - 1/2 teaspoon
- Oil - 3 tablespoons
- salt to taste
Method for Aloo Methi:
- Wash the Methi leaves thoroughly and chop them fine.
- Sprinkle some salt over them and keep aside for about half an hour.
- Heat the oil in a pan on medium level and lightly fry all the spices for a minute.
- Add the potato cubes, Methi leaves and salt .
- Mix well and cook covered on low level till the potatoes are tender and all the water from the Methi leaves has dried.
