Rajma Masala
Ingredients for Rajma Masala:
  • Red kidney beans  (Rajma)- 1/4 Kg
  • Oil - 3 tablespoon
  • Onions  -2 (finely chopped)
  • Tomatoes 2 (finely chopped)
  • Bay leaves - 2
  • Ginger - 1 tablespoon chopped
  • Garlic - 1 tablespoon chopped
  • Asafoetida - A pinch
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • coriander leaves - A bunch
  • salt to taste

Method for Rajma Masala:

  • Wash the Red kidney beans (Rajma) thoroughly and soak overnight in sufficient amount of water.
  • Do not drain the water of soaked rajma, place them in a pressure cooker, add more water if required and then add salt .
  • Place the cooker on flame , close the cooker ,after one whistle, cook on low level  till the beans are soft.
  • Heat the oil in a pan and add the cumin seeds. Add the bay leaves, asafoetida and chopped ginger-garlic, fry for a minute.
  • Add the onions and fry till they are golden brown then add all the spice powders except garam masala.
  • Add the  tomatoes , fry till the oil separates and add salt according to taste.
  • Add the cooked red kidney beans, mix well and cook on medium level for about 10 minutes.
  • Add the garam masala,cover and cook on medium level for about 2-3 minutes.
  • Garnish with coriander leaves.
  • Enjoy Rajma Masala with white rice.
