Ingredients for Bharva Karela:
- Karela (Bitter Gourd) - 1/2 Kg
- Mustard Oil 4 tablespoon
- Onions - 2 Finely chopped
- Garlic Cloves - 3 Finely chopped
- Fresh Ginger - Finely chopped
- Green chillies - 2 Finely chopped
- Fennel Seeds - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Amchoor powder - 1/2 teaspoon
- Thread to wrap karela
- Salt to taste
Method for Bharva Karela:
- Scrape the superficial skin with a knife and Cut a slit vertically in to the belly of the Karela.
- Rub the skin and the insides of the Karela with salt. Set aside for 2-3 hrs so that the bitter water will come out due to salting, Squeeze out the water .
- Heat oil in a heavy pan heat, add crushed funnel seeds, onions and salt. Saute till onions are clear.
- Add garlic, ginger and green chillies, stir well.
- Add Cumin, Coriander, Turmeric powder and Amchoor. Stir well. Add little water fry for another two minutes. Turn off heat.
- Fill the belly of the Karela with stuffing. Wrap Karela with thread so that the stuffing does not fall out.
- In a heavy bottom pan, put cooking oil, water and stuffed Karela.
- Turn on heat. As soon as the steam starts to build, cover the pan with the lid, and turn the heat to medium low and cook about 4 minutes.
- Turn over the Karela, cover and cook another 10 minutes.
