Bhindi Fry
Ingredients for Bhindi Fry:
  • Okra (Bhindi) - 1/2 kg
  • Oil - 3 tablespoon
  • Green chillies - 2 Chopped lenthwise
  • Ginger - Finely chopped
  • Onions - Finely sliced
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Amchur powder - 1/2 teaspoon
  • salt to taste

Method for Bhindi Fry:

  • Pat dry  and slice the okra into fine strips lengthwise or cut into rings.
  • Heat the oil in a heavy-based pan and fry the green chillies and ginger till the ginger turns brown.
  • Add the onion slices and fry on medium heat for till the onions are just  translucent .
  • Add the turmeric powder, Coriander powder and fry well, add okra stirring gently and briefly on high heat till it is well coated with the oil and looks glossy.
  • Mix in the salt, cover and cook on low heat till the okra is tender and well cooked.
  • Saute gently till the okra is well fried and starts sticking to the bottom of the pan.
  • In last add amchur powder and toss .
  • Enjoy Bhindi Fry with white rice or Roti/Chapati.
