Ingredients for Bhindi Fry:
- Okra (Bhindi) - 1/2 kg
- Oil - 3 tablespoon
- Green chillies - 2 Chopped lenthwise
- Ginger - Finely chopped
- Onions - Finely sliced
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Amchur powder - 1/2 teaspoon
- salt to taste
Method for Bhindi Fry:
- Pat dry and slice the okra into fine strips lengthwise or cut into rings.
- Heat the oil in a heavy-based pan and fry the green chillies and ginger till the ginger turns brown.
- Add the onion slices and fry on medium heat for till the onions are just translucent .
- Add the turmeric powder, Coriander powder and fry well, add okra stirring gently and briefly on high heat till it is well coated with the oil and looks glossy.
- Mix in the salt, cover and cook on low heat till the okra is tender and well cooked.
- Saute gently till the okra is well fried and starts sticking to the bottom of the pan.
- In last add amchur powder and toss .
- Enjoy Bhindi Fry with white rice or Roti/Chapati.
