Ingredients for Aloo Ghobi:
- Cauliflower, trimmed & cut into florets - 1/2 Kg.
- Potato, peeled and cut into cubes - 1/4 Kg.
- Oil - 4 tablespoons .
- Cumin seeds - 1/2 teaspoon.
- Green chili sliced - 1.
- Ginger, peeled & Chopped.
- Chili powder - 1/2 teaspoon.
- Coriander powder - 1/2 teaspoon.
- Turmeric powder - 1/2 teaspoon.
- Salt to taste.
- Garam masala - 1/2 teaspoon.
- Chopped fresh coriander, for garnish.
- Tomatoes, for garnish.
Method for Aloo Ghobi:
- Heat the oil over high heat until very hot but not smoking. Add the cumin seeds .
- Add the chili powder, coriander, turmeric, cauliflower, and salt and cover for 15 minutes.
- Gently stir in the potatoes and 1 to 2 teaspoons water to prevent the mixture from sticking.
- Cook for 20 minutes more.
- To serve, sprinkle with the garam masala and garnish with the coriander and tomatoes.
- Enjoy Aloo Ghobi with Plain parathas/Roties .
