Dum Aloo
Ingredients for Dum Aloo:
  • Potatoes  - 1/2 kg (Small sized)
  • Oil  - 4 tablespoon.
  • Bay Leaves - 4 no's
  • Cardamoms (Big) - 2 no's
  • Cloves  - 4  no's
  • Black pepper - 4 no's
  • Cinnamon - 2 sticks         
  • Coriander seeds - 1 tablespoon
  • Cardamom (small)     - 2 no's
  • Asafoetida - A pinch
  • Ginger  paste - 1 teaspoon
  • Garlic   paste - 1 teaspoon
  • Turmeric Powder  - 1/2 teaspoon
  • Chilli powder  - 1/2 teaspoon
  • Onion - 2 no's (grated)
  • Curd - 2 cup
  • Milk - 1/2 cup
  • Salt to taste    

Method for Dum Aloo:

  • Take coriander seeds, cardamoms, cloves, black pepper, cinnamon,  small cardamom  and grind it in a blender to make fine powder (garam masala).
  • Peel off the potatoes and prick them.
  • Heat oil in  pan . Fry the potatoes in oil over medium heat till they get light brown color and set them aside.
  • Add bay leaves, asafoetida, ginger-garlic paste, grated onion to the  oil. Fry till the paste or  the mixture starts separating from the oil.
  • Add the garam masala , turmeric powder, chilli powder and salt to this mixture and heat for 2-3 minutes.
  • Now add milk to make the gravy. Then add curd and continuously stir it.
  • Finally add pricked and fried potatoes to the gravy and  cook it for 10 minutes .
  • Garnish with green coriander leaves .
  • Enjoy Dum Aloo with Naan or Roti.
