Ingredients for Mint Sauce:
Mint leaves - 1 cup
Malt vinegar - 1/2 cup
Sugar - 1 tablespoon
Salt - a pinch
Method
for Mint Sauce:
Wash mint leaves and chop into fine pieces.
Bring vinegar to a simmer in a small saucepan, add salt, sugar and chopped leaves.
Simmer for about 10 minutes to infuse, add little water if needed.
Cool it and blent to make a thick and smooth sauce.
