Ingredients for Vegetable Biryani:
- Basmathi Rice - 2 cups
- Potato - 1/4 cups
- Carrots - 14 cups
- Beans - 1/4 cups
- Green Peas - 1/4
- Cauliflower - 1/4
- Onion - 1 no. sliced
- Tomatoes - 2 no's chopped
- Green Chillies - 4 no's
- Curd (Yogurt) - 1 cup
- Garam Masala Powder - 1 teaspoon
- Turmeric Powder - 1 teaspoon
- Red Chilly Powder - 1 teaspoon
- Coriander Powder - 1 teaspoon
- Cloves - 4 no's
- Cinnamon - 1 stick
- Cardamom - 3 no's
- Bay Leaves - 2 no's
- Ginger-Garlic paste - 1 teaspoon each
- Mint leaves - 1/2 cup
- Butter/Ghee - 3 tablespoon
- Salt to taste
Method for Vegetable Biryani:
- Wash basmati rice and soak the rice in water for 15 minutes.
- Drain the rice add 4 cups of water and cook till each grain is separate.
- Marinate all the ingredients from 5 to 15 above in yogurt for 30 minutes.
- Fry the bay leaves and onions in ghee till golden brown. Add the cut vegetables and saute for 2 minutes.
- Add the marinated masalas to the vegetables, add 1 cup of water , cover and cook till the vegetables are soft.
- Once the vegetables are cooked drain the excess water if any.
- Mix the cooked rice with the vegetables and saute for 2 minutes.
- Enjoy Vegetable Biryani with curd or raita's.
