Kashmiri Pulao
Ingredients for Kashmiri Pulao:
  • Basmati rice - 1/2 Kg
  • Milk - 2 cups
  • Cream - 1/2 cup
  • Saffron -  4 no's strands
  • Mixed Fruits - 1/2 cup chopped
  • Sugar - 1 teaspoon
  • Ghee/Butter - 2 tablespoon
  • Cloves - 3 no's
  • Bay leaf - 1 no.
  • Cinnamon - 1 stick
  • Cardamom - 3 no's
  • Cumin seeds - 1/2 teaspoon
  • Rose water
  • Salt to taste

Method for Kashmiri Pulao:

  • Wash basmati rice and soak in water for about 10 minutes.
  • Heat ghee/butter in a pan and add cloves, cinnamon, cumin seeds, bay leaf and cardamoms.
  • Now add soaked rice and fry for 2 minutes.
  • Mix saffron ,cream, milk, sugar and salt and add it to rice in a pan.
  • Add half a cup of water,bring to a boil ,cover and simmer till cooked.
  • When cooked, mix in chopped mixed fruit.
  • Add few drops of rose water before serving Kashmiri Pulao.
