Carrot Pickle
Ingredients for Carrot Pickle:
  • Carrots - 1/4 Kg
  • Mustard seeds - 1 tablespoon
  • Red chili powder
  • Mace - 2 pinch powdered
  • Cloves - 2 pinch powdered
  • Cardamom - 2 pinch powdered
  • Jaggery - 1/4 th cup shredded
  • Mustard oil - 1/3rd cup
  • Water - 3 cups
  • Salt to taste

Method for Carrot Pickle:

  • Scrap the carrots and cut into 2" long sticks .
  • Boil the water in pan,add carrots and blanch for a minute.
  • Drain the water and then spread carrots on a clean cloth and sun dry.
  • In a bowl mix the mace, cloves, cardamom, salt and jaggery.
  • Add the carrots and toss to mix and transfer to a sterilized glass jar.
  • Pour the mustard oil into a pan and place it over a moderate heat.
  • As soon as oil begins to smoke remove it from the heat and cool it, then pour it into the jar and cover it with a clean cloth.
  • Set the jar in sunlight for 13-14 days and keep shaking the jar 2-3 three times daily.
