Ingredients for Carrot Pickle:
- Carrots - 1/4 Kg
- Mustard seeds - 1 tablespoon
- Red chili powder
- Mace - 2 pinch powdered
- Cloves - 2 pinch powdered
- Cardamom - 2 pinch powdered
- Jaggery - 1/4 th cup shredded
- Mustard oil - 1/3rd cup
- Water - 3 cups
- Salt to taste
Method for Carrot Pickle:
- Scrap the carrots and cut into 2" long sticks .
- Boil the water in pan,add carrots and blanch for a minute.
- Drain the water and then spread carrots on a clean cloth and sun dry.
- In a bowl mix the mace, cloves, cardamom, salt and jaggery.
- Add the carrots and toss to mix and transfer to a sterilized glass jar.
- Pour the mustard oil into a pan and place it over a moderate heat.
- As soon as oil begins to smoke remove it from the heat and cool it, then pour it into the jar and cover it with a clean cloth.
- Set the jar in sunlight for 13-14 days and keep shaking the jar 2-3 three times daily.
